The house has smelled really wonderful over the last few weeks while i'm trying new recipes that are healthier and offer more nutritional benefits. The amount of carrots and apples in this loaf is substantial and the sugar is minimal. Enjoy!
1 large egg 1/3 cup brown sugar, packed 1/3 cup olive oil 1/4 cup plain yogurt 1 TBS vanilla extract 1 cup all purpose or whole wheat flour 1/2 tsp baking powder 1/2 tsp baking soda 3/4 cup grated carrot (I use the peels too) 3/4 cup grated apple (I use the peels too) Cinnamon, nutmeg to taste
Preheat oven to 350 degrees. Grease and flour a 9 x 5 inch loaf pan. Mix first five ingredients. Add flour, baking powder and baking soda. Don't overmix. Add spices and carrots/apples. Mix gently. Turn this thick batter into prepared pan. Bake for 55 minutes or until top is golden and toothpick in center comes out clean. Cool 15 minutes and turn out on wire rack. Cool before serving.
